making use of the last 3 months of my bachelorhood with my parents. I was so deprived of sleep after coming home from work at 2 a.m and had an appointment with a client prior to lunch at Kajang with Parental units. Despite the hot weather, and my sleep deprivation, it was a well spent sunday with my parents :)

Heaps had happened in the past 24 hours. Yesterday my eldest cousin welcomes the presence of baby no. 5. I've yet to see my new niece but this is a photo of her I snagged from my cousin's FB:

She looks like a little Eskimo! 

To keep my mind distracted from my own calamities, I decided to bake tarts again. Sans the custard. I made dark chocolate filling with a hint of cinnamon instead.

More photos later, I'm currently at the office. The weather has been unpredictable these days. With the bright afternoon sun surrendering to the heavy rain. On my way back home, I could vaguely see the road, I was driving in fear, even though I've driven in far worst weather, especially with the fact that I live on top of a hill, well sort of and am surrounded by the medley of tall big trees, and there were reminiscence of tree branches on the wet asphalt road, I'm very fortunate to be driving after those branches have fallen and not during. Alhamdulilah. 

Well, I best be off, need to get ready for dinner tonight @ Shook!  :)

Tasty Seafood Bake

Recipe adapted from Jamie Oliver's Tasty Fish Bake.



Ingredients

  • 400g/14oz potatoes, scrubbed and finely sliced
  • 4 tbsp olive oil
  • 1 clove of garlic, peeled and chopped
  • 1 onion, peeled and sliced
  • 1 bulb of fennel, trimmed and sliced
  • 4 medium or 8 small fillets of trout, pinboned (used Dory fillets & a mix of seafood) 
  • 285ml/½ pint single cream
  • 2 handfuls of freshly grated parmesan cheese, plus extra for sprinkling
  • sea salt and freshly ground black pepper
  • 2 handfuls of fresh breadcrumbs
  • 2 lemons, halved

Preparation method

  1. Preheat the oven to 200C/400F/Gas 6. Parboil the sliced potatoes in salted boiling water for a few minutes until softened, then drain in a colander.
  2. Place a 20cm/8in casserole-style pan on a low heat, and add the oil, garlic, onion, fennel and fennel seeds. Cook slowly for 10 minutes with the lid on, stirring every so often.
  3. Take the pan off the heat. Lay the trout fillets skin-side up over the onion and fennel.
  4. Mix together the cream, parmesan and anchovies, season with salt and freshly ground black pepper, and pour over the fish. Toss the potato slices in a little olive oil, season with salt and pepper and layer these over the top.
  5. Place in the oven for 20 minutes, sprinkling with the breadcrumbs and a little grated parmesan five minutes before the end. Serve with lemon halves, a green salad

Since I'll be having dinner with Iman and his little sister tonight, thought I'd make tiramisu for my family and them, oh and my neighbor too because she absurdly loves my tiramisu! Let's pray that my tiramisu making-skills is not a distant memory.

 

last time I made this baby was back in 2009 early 2010 when we just got back from Melbourne.  Here's a few facts about me. 1) I don't eat anything dairy or reminds me of milk (except ICE CREAM/ GELATO/ Certain CHEESE & CHOCOLATE) due to being lactose intolerance. 2) I do not take coffee.  It's funny actually, 3) I don't even know what tiramisu taste like, and when people tell me my tiramisu is really good, I take their word for it. 

Okay I best be off, the tiramisu won't make itself. Blessed Wednesday everybody!

A series of indulgence.

 

How to lose some pounds you tell me? Had a cook out with my father last saturday, I made Fried Prawns with basil, roma tomatoes & almonds, crabmeat spaghettini, while my father made spare ribs. My cousin Sara, made garlic bread. 

Sunday, had Chinese with Iman's family. I should be happy, my future in laws share the same passion as my family? FOOD! ameen. hehe.
